When I’m craving something sweet I love to make myself something that not only tastes good but is made from real ingredients that my body actually knows what to do with 🙂 I find I feel satisfied way faster and feel way better after a real foods clean treat rather than something I have purchased from the store. I first made this caramel cheesecake recipe in fall in Vancouver, Canada as you can see from the leaves in the background of the pics. It is super yummy but super rich. I totally can’t finish one of these jars in one sitting.
The recipe includes Lucuma powder which has an awesome caramelly taste and some really great health benefits! It’s a good one to add to smoothies too as it usually comes in powder form that is easy to add. Lucuma is actually though peruvian fruit that looks a little like an avocado.
Health Benefits of Lucuma
Some of my favorite health benefits of Lucuma include:
- Great for your skin
- Its high in beta-carotene which is great for your eyes and your immune system
- Helps support digestions
- Good for cardiovascular health
- It’s also a vegetarian source of Vitamin B3 which aids in muscle development and regulates stress and sex hormones.
Lucuma Caramel Cheesecake Recipe
This is really easy to make but you will need to make each layer at a time and then keep in the fridge in between adding a new layer. For the bottom and middle layer simply blend the ingredients together in a high speed blender or a food processor and add to the jar. For the top chocolatey layer you will need to heat all the ingredients together to mix them well. Then pour on top of the other two layers and add to the fridge to help it set.
40g Medjool Dates
5g Raw Cacao
120g Cashew Butter
50g Lucuma Powder
90g Coconut Oil
30g Agave Nectar
1 teaspoon of sea salt
35g Agave Nectar
45g Coconut Oil
25g Raw Cacao
Macros per serve Calories 367, Carbohydrate 18g, Sugar 10.7g, Fibre 1.7g, Protein 6g, Fat 31g
