Do you want to know what the secret ingredient is in these Chocolate Vegan Protein Bars?
I love avocado and they are full of vitamins, healthy fats and are great for you heart, your skin, your eyes, and they are a vegan source of protein! Great for protein bars! Although they are high in calories avocados have been shown to actually assist in weight loss and keep you full for longer. So here is my Chocolate Vegan Protein Bars Recipe with Avocado?
80g chocolate vegan protein powder (I used Sunwarriors warrior blend but you can use your own pea or brown rice protein powder or a different vegan blend)
Half an avocado which is about 60g
20g coconut oil
1/8 cup agave syrup (20g)
¼ cup water
Dark chocolate coating (Make your own chocolate for this one using coconut oil, cocoa and agave syrup or use your favorite dark chocolate brand)
This one is super easy!
Mash the avocado into a paste and melt the coconut oil.
Add all ingredients except the chocolate for the coating of the bar into a food processor and mix well. You can also mix this one in a bowl if you don’t have a food processor or I used my mini-whiz.
Separate the mix into seven portions and mold into bars. Put into the fridge or freezer to set (It makes it easier to coat the bars with chocolate)
Then either melt your dark chocolate or make your own. (I use 4 teaspoons of coconut oil, 6 teaspoons of cocoa and 2 teaspoons of agave syrup and it makes more than enough chocolate to coat seven bars).
Dip the bars into the melted chocolate and put back into the fridge or freezer again to set. Once the chocolate is hard (about 30 minutes) they are ready to eat!
Each bar in this mix has approximately 100 calories, 5g protein, 7g carbohydrate of which 2g fiber and <1g is sugar and 6g fat. Double the size of the bars if you want a bigger protein bite or add more protein powder and more water if you need to make a bar with a higher protein percentage. Remember these values are approximate only as they totally depend on the ingredients used and are based on making your own chocolate.
