Super Easy Energy Bar Recipe

This energy bar recipe is sooo super easy.

With only 3 ingredients it can be made in 10 minutes and sets super quick in the fridge so you can get on with more important things. Like mountain biking πŸ™‚

Ok. So what do I need?
about 10 medjool dates (176g)
1 cup of nuts, I did 1/2 cup almond and 1/2 cup walnuts (135g) and
1/2 cup oats (60g)

And then I?
Simply chuck all the ingredients together into a blender.
I like to blend my dates first and I find they blend up easier in my food processor with about 1/4 cup of water in there with them.
Then when the dates are done add the nuts and oats and blend all together.
Take the mixture out and mould into bars or use a baking dish to shape mixture into bars.
Put into the fridge for half an hour or so to set and they are ready to eat!

Now you can totally eat the bars just like this and they are awesome but I made a few different varieties with my mixture which you could try. I added 1/8 cup of coconut to the mix for a coconut bar and then rolled each bar in coconut as well. Or you could add some more roughly chopped nuts into the mix for more crunch. I added an extra 1/2 cup to these bars. Or for a chocolaty spin add 1/4 cup of cacao. I actually really love adding the nuts and cocoa together. Yumm!!
