Sweet Potato Toast Recipe

I LOVE sweet potato and when I first saw people cooking it in their toaster for a quick and easy breakky option I got super excited!! Although I will eat bread occasionally, I generally avoid it and so replacing it with sweet potato is such an awesome way to bring “toast” back into my breakfast repertoire!

Ingredients:

  • 1/2 sweet potato
  • Your favourite toppings

Toppings:

On the video above I made two of my favourites boiled egg, avocado & cherry tomato and almond butter with sliced banana. I also love though just adding avocado like below or homemade pesto with cherry tomatoes is super yummy too!! The options are endless! Got a favourite topping? Let me know in the comments below.

Directions:

Cut thin sliced of sweet potato and pop them in your toaster 3-4 times depending on the toaster. Then top with your favorite and enjoy!

Super easy and delicious!
