This is a super yummy vegan recipe that takes about 10 mins to prep and then you can just let it cook while you get on with the rest of your day!
Anyone else obsessed with roasted root veggies?
Serves: 2-3 people
Ingredients:
- 1 kg mixed root vegetables
- 500g mixed cooked beans
- 1 big onion
- 1 tbsp smoked pepper
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp coconut oil
- 1 sprig fresh mint
- salt, pepper
for the sauce
- juice of ½ lemon
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 3 tbsp tahini
- salt, pepper
Recipe
1. Rinse the roots well, slice them lengthwise and place them in a baking dish.
2. Season with salt, pepper, olive oil and vinegar and roast for 40 minutes at 180 ̊C
3. Slice the onions and sauté them in coconut oil on medium heat for 10 minutes until soft and caramelized.
4. Add the beans. Season with salt, pepper and smoked paprika and stir well.
5. Mix all ingredients for the sauce and stir well.
6. Place the roots in a big serving tray. Spread the onion and bean mixture on top.
7. Drizzle the sauce and sprinkle with some finely chopped mint leaves.
8. Enjoy!!!!!
